Cheers to Beer Cheese! Soup
A warm hearty soup that really hits the spot on those chilly days!
- 1 CHEERS TO CHEESE DIP MIX
- 4 baking potatoes, diced (may leave skin on)
- ½ lb bacon, cut into small pieces
- 1 small onion, diced
- 3 stalks celery, diced
- 3 carrots, diced
- ½ cup flour
- 2 cups half-and-half
- 1 12 oz. beer (less for thinner soup)
Cook potatoes in microwave, covered with water until tender ...fry bacon & remove from pan (reserve grease) ... add onion, celery,
carrots ... cook until tender ... add back bacon ... sprinkle with flour ... stir two minutes ... add dry dip mix ... slowly add half-and-half,
stir constantly ... when desired consistency is reached, add beer
